30 minutes on Sunday, makes for easy weekday dinners

On Sunday’s try and make a pot of any noodle you want (Ziti, Rigatoni, elbow whatever is on hand etc.), fully cooked (11 minutes to boil and drain) and mix it with your favorite jarred pasta sauce and ½ of the bag of cheese or 1 cup, pour into a 13×9 glass dish (sprayed), sprinkle it with remaining 1 cup mozzarella cheese and cover with foil. Pop in the fridge.

Now you have dinner for Monday night. Take out of the fridge when you get home from work to get to a bit room temp and then pop in the oven. (30 minutes baked on 350), and it looks like you actually put some thought into this dinner.

Most kids are not a fan of salad so if you have a cucumber or some carrots cut them up and some ranch dressing in a cute paper cup (kids love to dip) and call it Monday salad. If no available veggies or picky eaters, cut up an apple and add slices of cuties (tiny oranges), and call that “special salad”.

Kids love a label on everything. They will ask you for Monday salad, or special salad, or Monday Pasta if that is what you call it and they like this, win-win. There are no rules that say you must have a vegetable at dinner, fruit is fine, but then forgo the dessert.

Also, don’t forget, this usually has leftovers and lasts forever. Try and not do back to back nights with the same meal. This lasts up to 10 days. Put foil back over it, back in the fridge. Also, paper plates are awesome. No cleanup, only forks since you made it on Sunday!

  • ½ Box Ziti Pasta
  • 2 Cup Bag of shredded Mozzarella cheese
  • 1 16oz jar favorite meatless sauce
